Pectin

PECTIN is a polysaccharide, a natural plant-based thickener that is present in berries and fruits and may be used instead of gelatin. In contrast to gelatin, pectin may be used to thicken sour substances. Pectins helps to make stable jams with no sugar.
Ingredients: Gelling agent (apple pectin), glucose.
Method of Cooking: Take 1 package (10 g) per 1 kg of fresh fruit or berries and 500 g of sugar. Bring fruit of berries with sugar to a boil, add the thickener and simmer for not more than 2 or 3 minutes!
